Then mix the remaining ingredients and cook until it gets thick. Allow it to cool. For Sawayan, cook sugar, water and corn flour. Whisk well until it becomes thick. Once it is ready add in the piping bag and place on the ice cubes or in chilled water. Now take out the sawayan and allow it to set. Now place it in long glasses and add firni, sawayan, jellies and nuts. Serve chilled. Elaichi Dod: Ingredients: Milk 2 cups Cardamom powder 2 tsp Rock candy 1 tbsp Method: Boil milk with cardamom powder and rock candy. Lastly serve hot or chilled. Samosa pie: INGREDIENTS For Crust: Flour 2 cups Salt 1 tsp Carom 1 tbsp Clarified butter ¼ cup Water to knead Filling: Potatoes (boiled) ½ kg Oil 2 tbsp Onion (minced) 1 small Frozen peas ½ cup Coriander (chopped) 2 tbsp Green chilies (chopped) 2 Lemon juice 1 tbsp Turmeric powder ½ tsp All spice powder 1 tsp Cumin seeds (crushed) 1 tsp Red chili powder 1 tsp Chaat masala 1 tsp Salt to taste Fennel ½ tsp Egg wash as required INSTRUCTIONS: Preheat oven on 180 c. In a bowl mix all the dough ingredients and knead dough. Then heat oil and sauté onion. Now add potatoes and all spices with 2 tbsp water. Mix well. Lastly add fresh coriander and lemon juice. Then spread the dough. Now in a pie dish add potato mixture and place the dough. Bake it in an oven for 20 minutes.
