10 days hung, pan fried pheasant breasts... I've never been a big fan of hanging game too long, the stories of yesteryear when the old boys would hang em until the "maggots fell out their jacksy" ent my bag at all baby. I like to give them 5 days tops but, cooking these today, I'm a total convert, not only does hanging them longer make them much more tender but it allows you to cook them a bit more conventionally like chicken, instead of worrying about them drying out and going tough. The ageing also imparts a lot more flavour just like aged beef (and no, they're not gamey at all). I simply pan fried these beauties, I oiled the meat, plenty of seasoning both sides and straight into a sizzling hot pan, adding a little more oil half way through to intensify the heat and help really caramalize the outside, in total around three minutes per side then finally, the all important resting before slicing... I do like to keep it simple/classical when cooking game birds and let the actual game do the talking, if I see yet another media blogger/vlogger (what ever we're called) smother their said beautiful British game in a sauce or rub, always with names like Satan's snot or badgers dandruff too, ill do em a mischief.. Rant over!! Anyhoo, they were a revelation, possibly the best I've eaten EVER, and if I can do them on my butchers block in the prep room, you can do them at home. You don't have to get fussy either, a couple of pan fried pheasant breasts, some jockeys whips and some salad and you golden... If you want to get more fancy then so be it, maybe some dauphinoise, winter greens and gravy or, a pretentious jus, either way, they were remarkable... Lastly, my dilapidated old bush radio has had more blood and viscera flung up it than Dahmers couch and it's still banging out the tuneage, albeit some dodgy classical crimbo muzak, you can't beat a bit of classical music when your on the knife preparing meat, it calms one soul, like some pseudo Hannibal lecter type fella.
