Add thai chilies and continue pounding until the mixture becomes a paste-like consistency. Add ginger, pound until all ingredients are finely crushed. Add sugar, water, fish sauce (didn't realize this was cut out of my video - sorry!) and lime, stir until sugar is completely dissolved, taste and adjust if needed. Add cilantro. STORAGE Sauce can be kept in an air tight container in the refrigerator for up to 2 weeks.
