Yo-Yo/Melting Moment's An age old favourite, small, sweet and melt in the mouth! RECIPE Biscuit Ingredients: 125grams Butter, Softened 3/4 Cup Plain Flour 1/4 Cup Icing Sugar 1/3 Cup Custard Powder Filling Ingredients: 60grams Butter, Softened 2/3 Cup Icing Sugar 2 Tsp Lemon Rind, Grated 1 Tbsp Lemon Juice Instructions: 1. Preheat Oven to 180 degrees 2. To make the biscuits, use an electric mixer to beat the butter until pale and creamy 3. Add the flour, icing sugar and custard powder and stir with a wooden spoon until combined 4. Using your hands, roll dough mixture into balls, ensuring the size is consistent. Eg, I tsp or 1 tbsp for larger biscuits 5. Place the balls on a baking paper lined oven tray, 3cm apart 6. Using a fork dusted in icing sugar, flatten balls gently. You will need to dust the fork in between flattening each biscuit. 7. Bake in the oven for 15 minutes or until just cooked. Once cooked, remove from the oven and let cool on a wire rack 8. While the biscuits are baking, prepare the filling 9. Use an electric mixer to beat together all filling ingredients until light and fluffy 10. Spread the filling over the underside of a biscuit and sandwich together with another biscuit 11.
