Get ready for Thanksgiving and show your friends and family who need to avoid gluten how much you care about them! Everyone will enjoy this pie and the gluten free folks will LOVE it! Gluten-Free Apple Crunch pie 4 cups diced apples 1/4 C brown sugar ½ teaspoon cinnamon ⅛ teaspoon nutmeg 1 tsp cornstarch Dash salt For the topping: 1 cup (95g) old fashioned rolled oats, divided 1 cup (112g) raw chopped pecans, divided ⅓ cup (71g) brown sugar ¼ teaspoon salt ½ teaspoon cinnamon ¼ cup (56g) melted and cooled coconut oil Preheat oven to 350 degrees. Allow frozen crust to thaw while assembling ingredients. In medium glass bowl, combine apples, spices, brown sugar, corn starch and a pinch of salt. Microwave on high for two minutes. Stir again. While apples are in the microwave, make the topping. Add ½ cup oats and ½ cup pecans to a blender. Pulse for 15-30 seconds until oats are fine. Transfer mixture to a medium bowl, then add in remaining ½ cup oats and ½ cup chopped pecans, followed by the dark brown sugar, cinnamon and salt. Stir with a fork to combine. Next add in coconut oil and stir with a fork until well combined. Take ⅓ cup of the topping mixture and add it the bowl with the apples, stirring to combine. Pour filling into the crust, spreading evenly. Sprinkle remaining topping evenly all over the top, press gently. Bake for 40-55 minutes or until filling is very bubbly, topping is golden brown. #thanksgiving #glutenfree #homemadecooking #delicious #applepie
