Welcome to my channel! Today, I’m excited to share with you a simple yet delightful Raisin Cake recipe. This cake is soft, moist, and packed with sweet, plump raisins, making it a perfect treat for any occasion. Let's get started! Ingredients (Raisin Cake): 2 eggs (room temperature) 1/2 tsp vanilla 120 grams of sugar (about 1/2 cup) 80 ml of sunflower oil (about 1/3 cup) 80 grams of yogurt (about 1/3 cup) 170 grams of all-purpose flour (about 1 1/3 cups) 1 tsp baking powder 70 grams of raisins (about 1/2 cup) 1 tsp of flour (for coating the raisins) Cake Pan Size: 20 x 10 x 6 cm (8 x 4 inch) Baking Time: 45-50 minutes at 350°F (180°C) in a preheated oven Prepare the Batter: In a large mixing bowl, crack 2 eggs and add 1/2 tsp of vanilla and 120 grams of sugar. Stir the mixture for 3-4 minutes until it becomes pale and slightly frothy. Add 80 ml of sunflower oil, and 80 grams of yogurt to the egg mixture. Mix until well combined. Sift together 170 grams of all-purpose flour and 1 tsp baking powder. Stir gently until a smooth batter forms. Coat 70 grams of raisins with 1 tsp of flour to prevent them from sinking to the bottom of the cake. Fold the floured raisins into the batter until evenly distributed. Bake the Cake: Preheat your oven to 350°F (180°C). Grease a cake pan (20 x 10 x 6 cm) or line it with parchment paper. Pour the batter into the prepared pan, spreading it evenly. Place the cake pan in the preheated oven and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Once the cake is baked, remove it from the oven and allow it to cool in the pan for a few minutes. Transfer the cake to a wire rack to cool completely before slicing.
