YOUR Z GRILLS BREAK-IN RECIPE Ingredients: The Meat: 2 lbs ground beef (80/20) + 1 lb pork breakfast sausage. Aromatics: 2 large red onions (diced), 1 head garlic (minced), 1 dried cayenne chili. The Base: 5 cans (14.5 oz) fire-roasted diced tomatoes, 1 can (15 oz) tomato sauce, 1 can (7 oz) chipotles in adobo, 12 oz stout beer. The Flavor: 1 cinnamon stick, 1 tbsp cocoa powder, 3 tbsp chili powder, 1 tbsp cumin, 2 tsp smoked paprika, 1 tsp Mexican oregano, 1 tsp onion powder, salt/pepper to taste. Instructions: The Searing: Crank the Z Grills to 500°F. Sauté onions and garlic in avocado oil inside the Dutch oven until fragrant; add some salt and pepper for a boost. The Base: Once onions and garlic are fragrant and translucent, remove from smoker and add all base liquids and spices to the pot. The Setup: Drop the temperature to 225°F. Form and place the meatball on a rack directly over the chili. The Monitor: Use the Z Grills probe to monitor the meatball for an internal temp of 165°F. The Simmer: Once target temp is reached, crumble the meatball into the chili, stir, and raise the temp on your Z Grills to 275°F.
