But there should be no shortcuts in creating this duo of Imarti & Rabdi. Some things are enjoyed best when made in a traditional way, just like Imarti & Rabdi. Rabdi tastes best when slow cooked and when the malai is gathered slowly. The imarti requires a good whipping of the batter, not the addition of baking powder to make it light and airy. Put together these are one of the best Indian Dessert Combinations ever! Thank you for watching! 💫 And don’t forget to subscribe here: https://goo.gl/mQwVjN **************************************************************************** Recipe : Imarti Preparation Time: 30 minutes + Soaking time Cooking Time: 40 minutes Serves: 8-10 Ingredients: 2 cups white urad dal A pinch of orange colour 2 cups sugar Ghee to fry Method: Soak the dal for 3-4 hours. Grind to a smooth paste. Beat the batter till light and fluffy. Fill in a piping bag. Pipe out circular imartis in low medium hot oil. Allow to crisp on one side, flip and cook till the bubbling subsides. Cook the sugar wit 2 cup water for 7-8 minutes till a syrup of 1 string is formed. Add a pinch of colour. Soak the fried imartis in medium hot syrup. Serve hot. Rabdi Preparation Time 10 minute Cooking Time: 40 minutes Serves: 8-10 Ingredients: 2 Liter full fat milk ½ cup- ¾ cup sugar 1 tsp cardamom powder 2 tbsp chopped pistachio Method: Bring the milk to a boil, reduce the heat to a simmer. Using a skewer, push the layer of malai on top to one side. Keep repeating till a thick layer of malai is collected on the side and the milk is reduced to a third. Add the sugar and cook further till the milk is reduced to a quarter. Cut the malai into pieces and mix in the milk.
