For those who don't know what Ghevar is, it's a traditional Indian sweet dish prepared especially in the month of August to celebrate festivals like Teej and Rakshabandhan or Rakhi. It is one desserts or methai that is a piece of art and strongly defines the culinary might of the Indian Halwai. Rajasthani Ghevar is extremly popular and many varieties of ghevar with different toppings are serves, the most popular being rabri. If you ask me if Ghevar is easy - I would say Yes. But the trick lies in getting a perfect consistency for the batter and frying it perfectly from a height to get that web-like pattern. Follow my recipe step-by-step and trust me you too will get the exact ghevar that is delicious and yummy. #TeejSpecial #ghewar #ghewarrecipe #rakshabandhanspecial #indiandessert #indiansweet #mithai Ghevar (3 Types - Plain Ghewar, Rabri Ghewar, Custard Cream Ghewar) Prep Time – 30 min Cooking time – 20 min Makes – 3nos, 9” diameter Ingredients: FOR GHEVAR BATTER- Desi Ghee - 63gm Water - 1100ml Maida - 250gm Oil/Desi Ghee - for frying upto 1.5L Ice - few FOR SUGAR SYRUP- Sugar - 2cups Water - ½ cup Cardamom powder ½ tsp FOR RABRI- Milk - 1lt Sugar - 2tbsp Cardamom powder - ½ tsp FOR CUSTARD CREAM- Custard powder (vanilla) - 5 tbsp Sugar - 4 tbsp Milk - 1lt Butter (salted) - 1tbsp Whipped Cream - 2cups Pipping bag - 1no FOR TOPPINGS & GARNISHES- Pistachios Chopped - a handful Almonds Chopped - a handful Cashew nuts Chopped - a handful Mango diced - ½ cup Berries - ½ cup Mint leaves - few Note for equipment required - We would also need a wooden stick for picking ghewar.
