I'm on a quest for crispy pork skin using pork belly to make crispy Chinese roasted pork with crispy, cracking skin. Simplicity is the word of the day for this recipe. My goal is to try a couple cooking techniques and to keep the recipe simple where no overnight drying or marinading is used. Also, not salt crust is used during baking. The two cooking methods for crispy pork belly is to season and bake in an oven and the second is to parboil before seasoning and baking. I use a spice rub that's mainly five spice powder and salt. However, you can use any flavorful mixture or just use salt and pepper. I used a flavorful rub since I did not marinade overnight.
