This amazing #probiotic drink is much easier to make than you think! We always save passata bottle for making kefir. Wash them thoroughly and make sure they no longer smell of tomato. In any ferment, there are always two bottles on the go. One is the first ferment, which is the water and sugar blend with lemon rind and the kefir grains. The second is the next ferment, which can be flavoured with fruits, herbs and spices. The grains keep moving from first ferment to the next first ferment, leaving you with the simple bubbly drink to flavour as you wish. Fruits that are always winners in kefir in our opinion are blueberries, strawberries, raspberries, mandarin and water melon. We use herbs like mint, oregano and basil with the fruits too which add another dimension. We always add ginger slices and turmeric to the second ferment as well as some lemon juice. But that’s just us! You do you. You can get water kefir grains from good health food stores. And once you have them, it’s just so easy to keep this process going, giving you kefir for as long as you want it. ( Be sure you buy water kefir grains as this is a #plantbased recipe, not milk before grains. ) And the bonus is that the grains multiply so soon enough you’ll have extra to share with family or friends, or perhaps you could double your own production amount. Everyone is talking about #prebiotics and probiotics. This is a yummy way of making sure your gut is getting what it needs. Just a note too that all ferments contain trace amounts of alcohol, but this is usually between .2% and .8% and not intoxicating. Minimise the alcohol content by using a little less sugar, keeping the ferment time to 24 hours or so and storing the kefir in the fridge after it's ready. And if you still have concerns, you might use a muslin cover instead of a bottle cap, which is said to reduce the alcohol content again. Obviously, my mention of splash of gin for a summer time evening drink is going to effect the alcohol content, and as always, moderation is everything if you're enjoying this grown up version!
