Mexican-Easy quesadilla Servings-8 COOKING MUSHROOMS -1 cup cut mushrooms -1 big onion chopped -2 tbsp garlic & onion masala powder -1 tbsp mixed dry herbs -Sprinkle salt & pepper -4 tbsp Oil (as required ) -Heat oil over medium heat add onion sauté until the onions turns light brown & the raw smells has gone completely -add dry spices stir for a second add cut mushrooms and stir and cook until all the moisture has evaporated and mushrooms starting to caramelize, add 1 tsp hot sauce, sprinkle & salt & pepper stir continue cooking 1 minute -turn off the heat and set aside BOILING POTATO & KIDNEY BEANS -4 medium size potatoes wash and boil until fork tender, peel the skin & mash with potato masher Set aside -1/2 cup Small red kidney beans washed & soaked overnight, then pressure cooked util soft COMBINE -In a wide mixing bowl combine mashed potatoes, add boiled kidney beans, stir and cooked mushrooms mix well to combine Adjust salt & pepper set aside SAUCE -1/2 cup tomato Ketchup -2 tbsp sriracha sauce or any hot sauce -1/2 tsp garlic & onion masala Mix well set aside SHREDDED CHEESE -200gm mozzarella cheese (shred as required directly while you are making quesadilla or shred & keep them aside TORTILLA -warm the tortilla wraps in a medium heat and set aside -Place tortilla on a plate or a cutting board, spread ketchup mixture (too mush sauce mixture will make your quesadilla soggy instead of crispy) -add shredded cheese on one side top with a filling beans,mashed potatoes, sautéed mushrooms -Then finish with another sprinkle of cheese, fold the quesadilla in half sandwiching the filling -Place the quesadilla in a dry pan over very low heat cover with a lid this heats the filling through & melts the cheese faster. -Cook until golden & crispy flip over cook uncovered until crispy & cheese is molten about (2 minutes) -Slide the quesadilla onto a cutting board. Let cool for a minute or 2 for the cheese to set them cut into wedges. REPEAT -wipe the pan clean and repeat as described above with rest of the quesadilla. Serve with hot sauce. Enjoy!!!
