Moosse in Korea http://moosse.co.kr/ INGREDIENTS Olive oil - 2 tbsp Butter - 3 tbsp Onion - 1, chopped Bell peppers - 1, chopped Jalapeno - 1, chopped Garlic - 1 clove, minced Tomato paste - 2 tbsp Tomatoes - 5, coarsely chopped (no need to peel) Salt - 1 tsp Sugar - 1/2 tsp Paprika - 1/2 tsp Black Pepper - 1/2 tsp Eggs - 3 Parsley METHOD Prep Pan: In a deep pan, add olive oil and butter. Sauté Onion: Add chopped onion and sauté for 5 minutes. Add Peppers and Garlic: Add bell pepper and garlic, sauté for 3 minutes. Tomato Paste: Stir in tomato paste. Add Tomatoes: Add coarsely chopped tomatoes. Season: Add salt, sugar, black pepper, and paprika. Mix well. Simmer: Let simmer for 10 minutes to reduce water. Prepare Eggs: Beat 3 eggs with a pinch of salt. Add Eggs: Pour beaten eggs over the mixture in a labyrinth pattern. Avoid excessive mixing. Cook Eggs: Let cook for 10 minutes or until eggs are done. Garnish: Sprinkle parsley on top. PERSONAL NOTE Pomidor Yumurta is a comforting Azerbaijani dish that brings together tomatoes and eggs in a delightful medley of flavors.
