Corn Chowder recipe: Ingredients 1 cup diced Onion. 1 cup diced Potatoes. 2 cans of Cream Corn 3 cups Chicken Broth 2 Tbsp Butter 2 cups Sweet Corn 8 p.c. Bacon slices diced. 1 Tbsp fresh chopped Thyme & Oregano 1 Tbsp Chopped Garlic 2 cups Heavy Whipping Cream 1/3 cup Flour Garnish: cheese, green onions, bacon bits as desired for serving Instructions In a large soup pot over medium-high heat, cook bacon until browned. Add onion and celery, cooking and stirring until the onion starts to brown. Add garlic, salt, thyme and pepper and cook 1 minute. add flour stir and cook for about 2 minutes constantly stirring. Stir in broth, scraping the bottom of the pot to remove any browned bits. Add potatoes and corn & Heavy Cream. Stir, bring to a simmer, and reduce heat to medium low. Cook for 15-20 minutes until potatoes are tender. constantly stirring, Reduce heat to low. (Gluten free method): Combine corn starch with water and gradually whisk into soup mixture, a little at a time, until thickened slightly. Serve as desired.
