Ingredients 1/4 Cup Oil 500 gm Carrots (julienned) 1 Whole Cabbage (julienned) 1 Tbsp Chicken Powder 1 Tbsp Black Pepper 1 Tsp Salt 1 Tbsp Vinegar 2 Tbsp Chilli Sauce 1.5 Tbsp Hot Sauce 1 Tbsp Soya Sauce 200 gm Scallions 200 gm Green Onions 2 Cups Boiled Rice For Egg Fry: 2 Tbsp Oil 5 Eggs 1 Tsp Salt 1–2 Tbsp Black Pepper Directions: For Rice Preparation: Wash 2 cups of parboiled rice thoroughly and soak for 1 hour. Boil the rice until just cooked, strain, and set aside. For Vegetable Frying: In a pot, heat oil and add carrots and cabbage. Add chicken powder, black pepper, salt, vinegar, chilli sauce, hot sauce, and soya sauce. Mix well and stir-fry on medium flame for 10 minutes. Add scallions and green onions, mix well, and fry for another 2 minutes. Remove half of the vegetables and freeze them for later use. And reserve the remaining vegetables to use in rice. For Egg Frying: In a bowl, beat eggs with salt and black pepper. In the same pot, add oil and pour in the beaten eggs. Stir continuously and break the eggs into small pieces. Final Mixing: Add the reserved half of the vegetables to the eggs and mix well.
