And cook dried black beans, then transform them into a hearty black bean soup. Beans offer tremendous value and nutrition in a variety of meal options. Enjoy! For Cooking Dried Black Beans: 1 1/2 cups dry black beans (soaked for 8-16 hours in salted water, then drained) 2 Garlic cloves, peeled 1/2 White onion, peeled and left whole 2 Bay leaves Parmesan rind (optional) 1-2 teaspoons salt Combine all the ingredients in a heavy, medium size sauce pot. Cover with fresh water 1-2 inch above the beans, and cook at a low simmer until beans are soft, about an hour. Taste 5-10 beans for doneness. Discard the Bay leaves and Parmesan rind before serving. For Black Bean Soup: During the last 20-30 minutes of cooking dried black beans, add chopped vegetables like carrots, red bell pepper, and potatoes. Add 2-4 cups of veggie or chicken stock until the pot reaches a desired soup consistency. Discard the Bay leaves and Parmesan rind. To finish the soup, add one whole chipotle in adobe for additional flavor and a squeeze of lime. Serve soup topped with avocado slices, cilantro, and fresh salsa. For Black Bean Purée Spread: 1-2 garlic cloves, peeled and sliced 2 tablespoons olive oil 1 teaspoon ground cumin 1 teaspoon ground coriander One bunch cilantro stems and leaves (about half a cup) 2 Chipotles in adobo 1 tablespoon fresh lime juice 1 tablespoon apple cider vinegar 1 1/2 cups cooked black beans (with 1-2 tablespoons cooking liquid) Salt to taste Combine garlic and olive oil in a small bowl. Microwave for about minute, until garlic begins to sizzle. Add cumins and coriander to the hot oil to bloom the spices. Add the lime juice, cider vinegar, and salt to the spice mixture. In a food processor, pulse the cilantro stems until small pieces form. Add the strained beans, along with the onion and garlic cloves from the cooking liquid into the processor. Add all other ingredients to the processor, and blend until smooth. For a smoother consistency add some of the bean cooking liquid, 1 tablespoon at a time, and pulse. Taste for final seasoning, adding more salt if desired. Enjoy as a spread for quesadillas, burritos, and sandwiches. Or enjoy as a dip with tortilla chips!
