E, da quella partenza, ha sostenuto molte altre battaglie: per l'ambiente, per il benessere degli animali, per la nostra salute, a sostegno del lavoro dei pastori, delle pastore, di casari e casare di piccola scala. Cheese started with the battle to liberate raw milk production from the clandestine underground, when the specter of pasteurization was seen as the champion of food safety. This process comes at the expense of the natural characteristics of the milk, and strips a world of biodiversity away from dairy products made from just milk, rennet and salt. From these beginnings, Cheese has supported other battles: for the environment, for animal welfare, for our health, and for the work of small-scale herders, cheesemakers, and dairy farmers.
