I was craving a warm meal as the weather has been cold recently. I fancied spaghetti for lunch and I've been meaning to try cooking a one pot pasta dish for a while. I was quite curious to try it because I've seen a few other videos claiming how quick this method is - which I am always sceptical of. So, I threw this together, cooking from from scratch without a recipe. I'm using very simple ingredients that we have in our store cupboard. The method is also very simple and doesn't involve any skills other than roughly chopping and bringing the whole thing to a boil. This "recipe" is also good because it involves no frying or oil so it's low in fat apart from the cheese which is added at the end. The other bonus is this is relatively inexpensive to make - so, I would class this as a cheap, frugal meal. I guess if you wanted to increase the protein element you add a tin of chick peas or beans and perhaps some rehydrated soya or TVP. I probably wouldn't add dried soya as this would soak up the water which is needed for cooking the pasta. I guess the other benefit is saving on the amount of water used which is another bonus. This is not really how i would normally cook pasta but I was very interested to see how it worked. Did we enjoy it? Should we really be calling this a quick meal? Have a look and see how we got on! But if you were serving it with a salad you could probably serve 3/4 people. Ingredients 1 medium red onion 1 small bulb garlic 400g tinned tomatoes Fresh Basil...several leaves and stems 1 heaped teaspoon Dried mixed herbs Ground black pepper 1 heaped teaspoon vegetable stock powder. 1 tablespoon tomato puree Approx 300g spaghetti 1 litre cold water Grated Cheese.
