Madras chicken curry was one of the first dishes I learned to make and I quickly fell in love with the complex flavours that the spice combinations delivered. I served mine with Poppadums' and Basmati rice. On the face of it the dish should be quite hot, but instead it is the flavour combinations that dominate every mouthful.
