How to make tomato relish : Chop 800-900g tomatoes and add to a pot on medium heat. Chop 2 onions and add to same pot, giving it a mix. Then add 2 gloves (or 2 teaspoons) of garlic, 1 cup of sugar, 1/2 cup of vinegar (malt or apple cider), 2 teaspoons of salt. Mix all together and bring to the boil, then simmer for 5-20 minutes., In a small container, mix together 2 teaspoons of curry powder, 2 teaspoons of mustard powder, 1.5 tablespoons of cornflower and 1-2 tablespoons of vinegar and mix to form a paste. Add the paste into the simmering mixture and mix thoroughly to combine, leave to simmer until it thickens. Ladle the hot mixture into prepared jars and store in a dark place until ready to use - once jars are opened keep stored in refrigerator.
