Simply and delicious. These christmas cookies are a nice variation for the plate of Christmas goodies. They taste somehow like Bounty - but without the chocolate coating. Here we go. This is day 1 of my »Seven days, seven cookies« series. In the coming days I will publish a new cookie recipe each day. Here is the youtube playlist: My Facebook page: www.facebook.com/cakeclassics1 My Google plus page: www.plus.google.com/+cakeclassics My Twitter page: www.twitter.com/cakeclassics1 Recipe: 2 Wafer paper (7.8 x 4.7 inch), 4.9 oz Coconut flakes (140 g), 4.2 oz Sugar (120 g), 1 tbsp vanilla sugar, Orange peel (1 orange), 2 Egg white, 1 tsp lemon juice, Baking plate, greased, Baking temperature: 240°F (115°C), Baking time: about 40 minutes. Some tips: Place the wafer papers parallel without a gap. Let completely cool down after baking (easier to cut). First cut stripes with a sharp knight and then rhombuses. Put the cookies into a cookie box before you serve them. A golden rule for all cookie recipes: They taste even better after some weeks inside a box :-)
