Roasted potatoes: https://avirtualvegan.com/no-oil-cris... Next time I would add more salt & garlic powder (or any other seasonings you like) and add it while tossing in the pot! Mine were slightly under-seasoned, so do be generous with the seasonings. Roasted veggies: https://www.theendlessmeal.com/holida... I used 3 Tbsp. maple syrup, but kept the other seasonings the same, and obviously, no bacon! Butternut squash soup: https://www.loveandlemons.com/buttern... I omitted oil for sautéing and used 4 cups broth + 3/4 cup raw cashews blended with 1 cup water to make cashew cream (reserve 1-2 Tbsp. for topping the soup if desired). Salad: I used greens, tomatoes, cucumber, fresh parsley, apples (squeeze with lemon juice so they don’t brown!), toasted pecans, dried cranberries & vegan feta cheese Salad dressing: 1/4 c. veggie broth 1/6 c. red wine vinegar 1-2 Tbsp. olive oil 1/2 Tbsp. maple syrup 1/2 tsp. stoneground mustard 1/2 tsp. garlic powder Pinch of salt & pepper Dessert dates: https://minimalistbaker.com/tahini-st... I did not make my own chocolate, just used a blend of vegan chocolate chips + dark chocolate +. 1 tsp. refined coconut oil (optional). I also added walnuts when stuffing. (Pecans would work too!)
