Vanilla Sponge Cake Makes 1 8-inch cake round Preheat oven to 325°F or 163°C and have ingredients at room temp for best results Ingredients • 70g Whole Milk • 60g Oil • 5g/1 tsp Vanilla extract or paste • 130g Cake flour • 6 large eggs • Pinch of salt • 5g/1 tsp white vinegar • 130g white granulated sugar Directions Wet Mix 1. In a large bowl whisk together • 70g Whole milk • 60g oil • 5g/ 1 tsp vanilla extract or paste • 6 egg yolks 2. Combine the 130g of cake flour and a pinch of salt. Sift in about 1/3 dry mix and stir with a whisk until no streaks remain. Repeat twice more until no more flour remains. Set aside and do not overmix. Meringue 3. Add in 6 egg whites and 5g/1 tsp to the bottom of your stand mixer bowl or a regular bowl if using hand mixer. Whisk on medium speed for 2 minutes until frothy 4. Slowly sprinkle in the 130g of granulated sugar while the mixer is still running. Continue beating with the mixer for 5-7 minutes until your meringue reaches a medium peak. Folding 5. Take 1/3 of your meringue and fold into the batter until no streaks remain. Repeat this 2 more times until no more meringue remains. Baking 6. Line the bottom of your pan with parchment to easier remove the cake after it is finished baking. 7. Pour the batter into the cake pan. Tap and shake the pan to even out the batter and to remove any air bubbles. 8. Place it in the preheated oven for 30-45 minutes or until a toothpick inserted in the middle of the cake comes out clean, baking time will depend on your oven. 9.
