QATAYEF© Also called Atayef in many regions, Is a Rolled Pancake dough stuffed with Sweet Cheese, and Dipped in Syrup. Like a Fritter. The Pancakes are prepared similar to Scottish Crumpets. But rather much thinner. Similar treats have been around for over 5000 Years. Even the Greeks and Romans enjoyed Pancakes with Honey Syrup and filled with nuts before even they arrived in the Middle East. In America they are enjoyed as a Pancake with an American Indian Idea called Maple Syrup, from a Maple Tree, and my personal favorite syrup as well! Qatayef is exactly the same, but only cooked on one side, never flipped. And Semolina based. Qatayef is a common treat all over the Middle East, mainly during Ramadan due to Caliph's in the Fatimid and Abbasi Periods. Originally called Atayef Mehshi, with Atar(Sugar Syrup) With more of Origins to Egypt and the Greco-Romans before the arrival of Islam. Now. Since Cheese was mainly produced in the Nablus and Akko regions of the Levant. Thus the name Akkawi and Nablus cheeses made today. The original cheese of Qatayef is a sweet version of the Akkawi Cheese. A crumbling cheese. Later Syrian, Lebanese, and even Jewish cooks would acquire this recipe into their culture. And the rumor of creation with this in Syria as a concept is wrong in world history. As it really had many origins. In fact. There never existed a liquid "Poured Batter on a hot griddle" recipe in the Middle East until the arrival of the Europeans. Well. Pretty much everyone in Levant is of European Blood anyway now. And the Caliphs of the Ancient Islamic Empire in Syria had carried this on until this day many years later. My recipe cuts down much of the pain staking time. And this entire treat can be made in less then a hour easily. Note: In many big cities of the U.S. with large Arab populations, and in the Middle East. You will find stores selling already made Qatayef Cakes. So you may go home and assemble the fillings, and fry when guests arrive. Making it fresh! ENJOY! Ingredients: Batter: 2 Cups Flour 1 Cup Fine Semolina 1 Tbsp Baking Powder 1 Tbsp Yeast 2 Tbsps Sugar 2 Tbsps Milk 3 1/2 Cups Warm Water Dash Vanilla Powder (Optional) Store Pancakes in Damp Cloth Always Syrup: Boil: 2 Cups Water 4 Cups Sugar 1 Tsp Rose water or Orange Blossom water Dash of Lemon Juice Filling: 1 Block Sweet Cheese 2 Tbsp Sugar Handful Mozzarella Cheese (Optionally you can do Cinnamon and Nuts(Walnut or Pistachio), or even add Dash Cinnamon to this Cheese Mixture) About 1/2-inch Cooking Oil in a Pan to Fry Cooking made simply from the Worlds Table
