Tender, fall-apart beef chuck simmered in rich tomato passata, garlicky sautéed dandelion greens, and crispy ciabatta bruschette—perfect for cozy family dinners. Ingredients: For the Sugo: 2 lbs beef chuck cubes 1/2 yellow onion, diced 2 celery stalks, cubed 2 carrots, cubed 2 bay leaves 1 bottle (24 oz) tomato passata 1/2 cup red wine Olive oil Salt and pepper For the Ripassata (Dandelion Greens): 2 bundles dandelion greens 2 cloves garlic, finely chopped Olive oil For the Bruschette: 1 loaf ciabatta bread Olive oil For Serving: Grated Parmigiano Reggiano Instructions: 1. Heat olive oil in a large pot over medium-high heat. Add the beef cubes and sear for 5 minutes until browned on all sides. 2. Pour in 1/2 cup of red wine and scrape up any browned bits. Let the wine evaporate completely (about 2 minutes). 3. Add diced carrots, celery, and onion. Stir and cook for 5 minutes until the vegetables are softened and fragrant. Season with salt and pepper. 4. Stir in 1 bottle of tomato passata. Fill the empty bottle with water and add it to the pot. Add bay leaves and season with salt. 5. Bring to a boil, cover, reduce heat to low, and simmer for 2–3 hours, stirring occasionally. 6. Trim and boil the dandelion greens in salted water until tender, then drain. In a pan, heat olive oil and sauté garlic until fragrant. Add the greens and cook for 2–3 minutes. 7. Slice ciabatta, drizzle with olive oil, and toast at 400°F until golden. 8. Serve the sugo, greens, and bruschette separately.
