Nick shows you how to prepare a simple and delicious eggplant (aubergine) recipe. Called Melanzane in Italian, Nick dresses it before placing on a bbq grill. The aroma while the eggplants are cooking is sublime! 🍆 BBQ EGGPLANT 🍆 INGREDIENTS ** Eggplants Olive oil 1-2 cloves garlic, roughly chopped Salt Dried oregano Red wine vinegar METHOD Wash eggplants. Trim both ends. Cut into 1cm (or as Nick says 10mm) widths. Season with salt and dried oregano. Place into a large bowl. Drizzle with a generous amount of olive oil, red wine vinegar and a bit more dried oregano. Add the garlic. Toss well so all the eggplant is covered with the dressing. Heat a bbq hotplate or grill. Add a drizzle of olive oil. Lay the eggplants flat and cook on both sides to your liking. Remove and allow to cool. Buon Appetito!! You can keep them in the fridge and use later in n sandwiches. ** Nick doesn’t measure quantities, he goes by intuition.
