Sugar Flower Tutorial: Café Au Lait Dahlia (Part 3) | Honey Crumb Cake Studio And we’re back with the FINAL part of our super-detailed tutorial on making dahlias out of sugar. Carla will take you by the hand and help you master this challenging flower! In part 1, we showed you how to build the flower center and the first 7 rows of petals. In part 2, you saw how to create the final row of unwired petals plus two rows of wired outer petals, and assemble the flower -- plus how to make the dahlia leaves. Now, in part 3, you'll learn to add color to your flower and leaves using petal dusts and edible paint, how to add a calyx to the dahlia, and how to assemble the leaf sprays. Tools & materials needed for Part 3: Gumpaste (link to our recipe BELOW) Cornstarch to prevent sticking Shortening (optional; to condition your gumpaste while kneading it) Water, egg whites, or edible glue, plus a small paintbrush Gel colors: I used "Electric Green", "Chocolate Brown", and "Egg Yellow" by Americolor (to create the bright chartreuse green paste for the calyx); I added Forest Green to create a darker green paste (for making the leaves -- shown in part 2); finally I used "Electric Green" and a bit of "Chocolate Brown" mixed with vodka to create an edible paint to glaze the dahlia leaves Vodka (or lemon extract, vanilla extract, or rose water) to create edible "paint" for the leaves -- see above Six-petal daisy cutter (also used in Part 1 of this tutorial) Gumpaste rolling pin, foam pad, and large/medium ball tool Dresden tool Petal dusts: I used "Baby Pink" (Crystal Colors), "Mushroom" (CK Products), and "Green Grape" (Elite Color) Floral tape (green) - cut in half with scissors for assembling the leaf sprays 22 gauge wire (green or white) for adding support to your leaf sprays ___ Thanks for watching!
