In this video i'm going to be hanging some baby back pork ribs in my drum smoker! The rack of pork ribs i'm using in this video were trimmed previously and had the membrane removed, here's a video on how to do that if you're interested: • How to Remove Membrane and Trim Baby ... In this video I follow a pretty standard pork rib cook, however for the first part of the cook i'll be hanging the pork ribs instead of laying them on the cooking grate. Personally I don't see too many benefits to this, however one big benefit is being able to hang 9 racks at a time if you use all the hooks and brackets supplied with the drum. Outside of hanging the pork ribs, they were smoked initially at 135c/275F for around 90 minutes until the rub had set and they developed a nice colour, then they were wrapped in foil with butter, honey and brown sugar, placed back in the smoker and continued cooking until they were probing tender around the 96c/205F internal mark, which took around 60-70 minutes once wrapped. They were then finished off in my BBQ sauce before being sliced and served!
