Meat Pie (Kubdari) Kubdari is the stuffed bread from Svaneti, the land of ice and snow. Romanticized by poets and artists, in fact the everyday life of these mountain dwellers is not as romantic as one might think. Their life is more of a fight for daily survival against the fierce climatic conditions. A clannish culture aids subsistence although family feuds are not uncommon. Livestock has a predominant presence on the mountain slopes and pastures. Agriculture is limited to farming on small terraces ringing the mountain sides. Kubdari consists of three vital ingredients for the mountain dwellers: meat, bread, and salt. The kubdari dough is kept simple with basic ingredients, thus plenty firm enough to hold the juicy meat filling. To make kubdari taste its best, fat content matters. Kubdari is typically made with fatty lamb, but beef is also acceptable. I use rib eye steaks, but you could use a leaner cut such as sirloin steak as long as you add 1 tablespoon of clarified butter into the filling. What gives the unique taste to kubdari is Svanetian salt, which has many spices mixed in it. When you slice a hot kubdari, foreign aromas from the faraway land of proud warriors and horse riders infiltrate your nostrils and perfume your kitchen. Kubdari is a meal in itself (like pizza), and it can be served with a glass of plain yogurt for breakfast.
