These waffles are made with a yeast batter. They are a little bit chewy when cooled. This kind of waffles is popular in Asia which you can add anything to it for sweet or savory waffles. Ingredients: 1/4 cup warm water 1/2 ts. active dry yeast or instant yeast 1-4 tb sugar, more or less as wanted 2 large or extra-large eggs 1/2 ts vanilla 1 cup buttermilk (or coconut milk which is using Asia.) 1 cup milk (I use 2% milk) 2 cups all-purpose flour 1/2 ts. salt 1 ts baking soda Method: 1. In a bowl, mix yeast, sugar, and warm water together. Let proof for 5-10 minutes. 2. Add eggs and vanilla, mix well. Then add buttermilk (or coconut milk), mix well. 3. Sift in all of the dry mixtures. (You can mix all of the dry ingredients first and sift them into the batter.) 4. Stir until just combined. Then add 1 cup milk, stir and mix until blended. The batter should be liquid. Cover and let it rest for 20-30 minutes. 5. Heat the waffle iron according to the manufacturer's instructions. Grease it with oil or melted butter. 6. Pour 1 ladle full or more to fill the surface of the iron. Close the lid and cook until the indicator light comes on again. 7. Remove the waffle and repeat the process for the rest of the batter. Note: It is best to serve immediately. They will get chewy when cooled.
