Prepare the dough – In a bowl, mix flour, sugar, and salt. Add warm milk gradually and knead into a soft dough. Add oil and knead again until smooth. Rest the dough for 20–30 minutes. 2. Make the filling – In another bowl, mix sliced onions, coriander, chilies, salt, and spices. 3. Shape the paratha – Divide the dough into balls. Roll one out, spread some filling, fold it, and roll again gently into a layered disc. 4. Cook – Heat a tawa or pan, place the paratha, and cook on medium heat. Flip and cook both sides with a little oil or ghee until golden and crispy. 5. Serve hot with chai, yogurt, or pickle. ✨ A perfect cozy breakfast! 🍗 Chicken Malai Handi Recipe Ingredients: • 1 kg chicken breast, cut into cubes • 2 medium onions (sliced) • ½ cup cashews • 2–3 green chilies • 1 tbsp ginger-garlic paste • 1 cup Greek yogurt (whisked) • ½ cup fresh cream • 1 tbsp butter • Fresh coriander (chopped) • Salt & spices to taste (black pepper, garam masala, cumin, chili flakes) • 2–3 tbsp oil Method: 1. Prepare the base – Heat 1 tbsp oil, fry onions, cashews, and green chilies until golden. Let cool, then blend into a smooth paste. 2. Cook the chicken – In a handi (deep pan), heat oil/butter and sauté chicken cubes with ginger-garlic paste until lightly golden. 3. Add the paste – Pour in the onion-cashew-chili paste, mix well, and cook for a few minutes. 4. Yogurt time – Lower the flame, add whisked yogurt gradually, and stir continuously to avoid curdling. Cook until chicken is tender and oil separates. 5. Finish with cream – Add fresh cream and butter, mix gently, and cook for 2–3 minutes on low heat. 6.
