~ C A R I B B E A N - S A T U R D A Y - S O U P ~ Serves 8-10 INGREDIENTS 2 onions 1 large potato 2 large sweet potatoes 300g yam 500g pumpkin 2 bell peppers 1 scotch bonnet Handful fresh thyme (or dried) 3 spring onions 3 carrots 2 corn on the cob 8 whole pimentos 2 tbsp tropical seasoning Packet pumpkin soup mix 1 chou chou (chayote) 3 tbsp green seasoning 2 tbsp paprika 1 tin coconut milk (400ml) 250g plain flour (for dumplings) 1 tsp salt (for dumplings) METHOD 1. Prep veg - peel and chop into chunks the - potato, sweet potatoes, carrots, yam, onions and spring onions. Peel and take out the core (like a pear) of the chou chou, and cut into chunks. De-seed and cut off the skin of the pumpkin and cut into chunks. De-seed the peppers and cut into chunks. Cut the corn on the cob into chunks. 2. Cook - add all the prepped veg into a big pan. Add coconut milk and 2l boiling water. Bring to the boil, then add the seasonings - tropical, green, whole pimentos, pumpkin soup mix and paprika. Stir and add fresh thyme (or dried) and whole scotch bonnet. 3. Dumplings - put the flour into a bowl, add the salt and slowly mix cold water into the flour until it forms a dough. Kneed to make a smooth dough. Break off small pieces and roll into sausage shapes or round flattened balls. 4. Once the veg has softened, add in the dumplings pushing into the sauce and add the corn on the cob. Cook for 15 mins. Can be cooked in the slow cooker or slowly on the hob. 5. Serve!
