This video is a demonstration for cooking catfish in the oven coated with potato chips as the breading. Also included are oven roasted herb potato wedges. Recipe instructions: Egg Wash 3 Eggs Dash of Milk Catfish Breading: Place potato chips in plastic zip lock bags and crush with rolling pin or by hand. For a finer breading, place chips in a food processer and mix until chips reach the desired consistency. Catfish: Rinse Catfish and dry. Season with Creole seasoning. Dip Catfish fillets in egg wash and coat with crumble potato chips. Lay fillets in a single layer on a backing sheet lined with parchment paper and back at 375 degrees until fish is cooked through. Potato wedges: Wash potatoes and cut into desired sized wedges. Coat with olive oil and season with black pepper, creole seasoning, oregano and parsley flakes. Place on backing sheet lined with parchment paper in a single layer and cook in oven at 375 degrees until done.
