Kathal Nilgiri Korma is a delightful Indian dish made with tender jackfruit (kathal) cooked in a rich, creamy, and aromatic green (Nilgiri) gravy. The gravy typically consists of a blend of fresh herbs like mint, along with coconut, green chilies, and spices, creating a vibrant and flavorful sauce. It's often enjoyed with rice, roti, or naan. #namakshamak #chefharpalsingh #kathalkisabzi #recipe #indianfood #food #cooking Ingredients quantity Jack fruit 800 gram Oil for frying Onion chopped 2 no Ginger chopped 1 tbsp Garlic chopped 1 tbsp Green chilli chopped 3-4 no Bengal gram 1 tbsp Water as required Mint leaves 1 cup Fresh coriander 2 cup Curry leaves 5-6 no Whole cashew nuts 10-12 no Dry coconut grated ½ cup Water as required Oil 1 tbsp Cumin seeds 1 tsp Curry leaves 5-6 no Asafoetida 1 tsp Coriander powder 1 tbsp Red chilli powder ½ tsp Turmeric powder ½ tsp Fennel powder ½ tsp Garam masala ½ tsp Tomato chopped 2 no Salt to taste Water as required Curd 4 tbsp Water as required Green cardamom powder 1 tsp Method 1.Take jack fruit and deep fry well. 2.In a blender add chopped onion, chopped ginger, chopped garlic, chopped green chilli, Bengal gram. 3.Add a little water and blend to a smooth paste. Set aside. 4.In that mixer jar add mint leaves, fresh coriander, curry leaves, cashew nuts, grated dry coconut and water grind a smooth paste. 5. Place a kadai on medium flame and heat oil. Add cumin seeds, curry leaves and asafoetida. 6.Pour the prepared onion paste into the kadai and mix well. Sauté for an 8 minutes. 7. Add coriander powder, red chilli powder, turmeric powder, fennel powder and garam masala mix well. 8.Add chopped tomato and salt sauté well will adding a water for 10 minutes. 9.Add curd and mix well. Cook for 2 minutes. 10.Pour the prepared Nilgiri paste into the kadai and mix well. 11.Add water in a blender and mix well then add in a kadai. 12.Add fried jack fruit mix well. Cover the kadai and cook for 10-12 minutes stirring occasionally. 13.Finally add green cardamom powder and stir well. 14.Side out in a serving bowl and Enjoy your Kathal Nilgiri Korma!
