In today’s video, I’m making the ULTIMATE Indo-Caribbean fried rice – using chicken marinated in Sauce La Soya (that Trinidadian soy sauce in the orange tin), frozen bora from my garden, and all the herbs my ancestors would approve of. 🇹🇹🇬🇾 As a single elder millennial with no kids, sometimes it doesn’t feel “worth it” to cook a whole meal like this just for myself. But food like this feels like home. And I really believe that even if we’re single, busy, or living far from family, we should still keep our traditional foods alive – for us. For comfort. For culture. For the little girl in us who grew up on these flavours. This fried rice is: • Indo-Caribbean inspired, home-style, not “perfect” – but real • Packed with flavour from Sauce La Soya marinated chicken dusted in cornstarch • Loaded with carrots, celery, and bora from my garden • Finished with bandania, broad leaf thyme (podina), fine thyme, oyster sauce, Vet-sin (MSG), and sesame oil If you grew up with Trini/Guyanese flavours or you’re Caribbean at heart, this one’s for you. 💚 ⸻ 🐔 Main Ingredients: • Chicken marinated in Sauce La Soya (Trinidadian soy sauce in the orange tin) • 2 cups boiled rice (day-old, kept in the fridge) • Carrots, celery, bora (long beans) • Onion, garlic, ginger, pimento, scotch bonnet • Bandania (culantro), podina (broad leaf thyme), fine thyme • Oyster sauce, Vet-sin (MSG), sesame oil ⸻ If you try this recipe, let me know in the comments how it came out and what your version of “home” tastes like.
