No refined sugar, eggless, millet-based and perfect for tea-time or festive gifting. ✔ Millet based ✔ Refined sugar-free ✔ Eggless ✔ Bakery-style texture ✔ Beginner-friendly ✔ Good shelf life ❤️ LIKE | SHARE | SUBSCRIBE to Easy Cooking with Das for more healthy bakery-style recipes. 📏 YIELD • 18-19 cookies • Each ~20 g • Baking time: 20 minutes 🧾 INGREDIENTS 🧈 Wet Ingredients • Ghee – 100 g (½ cup, semi-soft) • Jaggery powder – 90 g (¾ cup, very fine & sieved) • Milk – 25 ml (5 tsp, room temperature) 🌾 Dry Ingredients • Jowar flour – 50 g (5 tbsp) • Little millet flour – 40 g (4 tbsp) (or ragi / bajra) • Besan – 50 g (5 tbsp) • Fine suji – 20 g (2 tbsp) • Cornflour / Arrowroot – 10 g (1 tbsp) • Baking powder – ½ tsp • Baking soda – ¼ tsp • Cardamom powder – ½ tsp • Salt – 1 pinch 🌰 Topping • Chopped pista – 1 tbsp 👩🍳 METHOD 1️⃣ Cream the base In a bowl add ghee, jaggery powder & milk. Whisk 2–3 minutes until smooth, creamy & lighter in colour. 2️⃣ Sieve dry ingredients Sieve all flours, baking powder, baking soda, salt & cardamom. Add to the jaggery mixture. 3️⃣ Make dough Fold gently with a spatula. Bring together into a soft, crack-free dough. Do not knead. Rest in fridge for 15 minutes. 4️⃣ Shape Divide into 20 g balls. Smooth, place on lined tray. Top with pista and press slightly. 5️⃣ Bake Bake in a preheated oven at 160°C for 20 minutes. Bottom should be light golden, top pale. 6️⃣ Cool & store Cool completely. Cookies will firm up. Store in airtight container.
