To satisfy the hunger of the shoppers and retail traders at Sharjah Gold Souq, Al Shaab Cafeteria's owner came up with a delicious, mouth-watering sandwich recipe in the 1980s which has now become very famous across UAE. This Sandwich is popular by the name of - Sharjah Gold Souq's Chips Sandwich. It is a sandwich roll made of Khubz (Arabic Flatbread), Irani/Onion Samosas, French Fries and loads of cheese & butter. This Sandwich is close to my heart as this used to be our weekend special. Picking the sandwich from the cafeteria, visiting the nearby corniche and having it there with the family used to be our weekend fun. The taste of this sandwich is unforgettable and so I remade this same sandwich at home and here is my version of it. Since this recipe takes time when making everything from scratch, I used a few shortcuts here. Khubz (Arabic Flat Bread) - If this is not easily available, you can make it at home or even get Tortilla Bread. 2. Irani/Onion Samosas - If these samosas are not available, you can buy frozen vegetable samosas or make them at home. 3. Chopped Tomatoes 4. Chopped Onions 5. French Fries - I bought frozen french fries and fried them. 6. Spread Cheese 7. Butter 8. Salt & Pepper Khubz/Arabic Flatbread: Ingredients: 1. Wheat Flour - 2 Cups 2. All Purpose Flour/Maida - 1 Cup 3. Semolina/Sooji - 1/2 Cup 4. Baking Soda - 1 Tsp 5. Curd/Yoghurt - 3 Tbsp 6. Salt to Taste 7. Water for kneading the dough Method: In a plate or bowl, add all the flours, baking soda, curd, salt and mix it well. Then add water as required for kneading the dough. The dough should not be very hard and extremely soft. Rest the dough for 30 minutes. After 30 minutes, knead the dough again and make small balls out of it. Then roll out each ball into a thin flatbread. Roll out as evenly as possible. Then heat a pan and cook the flatbread on it. First cook both sides quarter way through. As soon as you see bubbles rising on both sides, use tongs and cook the flatbread directly on the flame. The flatbread will puff up if it is evenly rolled out. If your flatbread does not puff, it is okay. Make all the breads and keep them aside. Irani/Onion Samosas: Irani/Onion samosas are made with flattened rice and onions along with spices. These samosas give an amazing flavour to the sandwich. Samosas are usually crushed and spread across when making the sandwich. Now, making these samosas at home can be a time-consuming process so I used a bit of a shortcut here. Instead of making samosas, I just make the filling and fry the samosa pastry separately. Filling Ingredients: 1. Onion - 1 Medium Sized 2. Flattened Rice/Poha - 1 Cup 3. Chilli Powder - 1 Tsp 4. Dry Mango Powder/Amchur Powder - 1 Tsp 5. Garam Masala - 1/2 Tsp 6. Turmeric Powder - 1/2 Tsp 7. Salt to taste 8. Oil - 1 Tbsp 9. Repeat all the spices when cooking the filling - 1/4 Tsp each Method: First, wash the flattened rice and keep aside for 3-4 minutes. In a bowl, add the sliced onions, flattened rice, all the spices and mix well. Heat a pan, add oil, all the spices and add the mixture to it. Cook the mixture for 5 minutes. Then keep it aside and let it cool. Once the mixture has cooled properly, grind it to a coarse texture. (Do not over grind the mixture) Samosa Pastry Ingredients: 1. All Purpose Flour/Maida - 1/2 Cup 2. Wheat Flour - 1/2 Cup 3. Sugar - 1/4 Tsp 4. Salt to taste 5. Hot Oil - 1 Tbsp 6. Water for kneading the flour 7. Oil for frying In a bowl, add the flours, salt and sugar. Pour hot oil and mix the dough well. Then knead the dough with water to a soft dough. On a rolling plate, roll out the dough, as thin as possible, in an oval or circle shape. Cut out small rectangular shapes. Fry the samosa pastry in oil and keep aside. Assembling the sandwich: Take a flatbread and open it as shown. If your flatbread has not puffed up, then use two flatbreads instead of one. Spread butter on both sides of the flatbread, then spread cheese on it. You can use cheese slices or grated cheese as well. Next, add the chopped tomatoes, onions. Top it with french fries. Then spread the filling across and crush the samosa pastry. Top this with tomatoes and onions. Sprinkle salt and pepper. Close the flatbread and spread some butter on the top. Grill this sandwich in a sandwich griller or toaster. Serve this as is or roll it in a wrapper. Have it with some chilled soft beverage and enjoy this delicious sandwich. Tips: 1. Add Red Pepper Sauce (Tabasco Sauce), it will enhance the flavour of the sandwich. 2. You can add in chopped green chillies also. 3. Chopped coriander can be added to the samosa filling.
