Who doesn't love iced sugar cookies at the holidays? This is a great recipe that is easy and versatile. The icing is also excellent and versatile! Have fun! BTW--it should be noted that while icing and frosting are often interchanged, they are not the same. Frosting is thicker and softer, while icing like royal icing is thinner and hardens. SUGAR COOKIES 4 C sifted flour 2 1/2 tsp baking powder 1/2 tsp salt 2/3 C butter flavored shortening or butter 1 1/2 C sugar 2 eggs 1 tsp vanilla (or other flavoring) 4 tsp milk (aprox) Directions SIFT Together flour, baking powder and salt. MIX butter, sugar, eggs, milk, vanilla until fluffy Alternate mixing dry ingredients into wet. Chill dough at least 4 hours, overnight is fine. Heat oven to 350 F. Roll out dough to roughly 1/2 inch thick and cut into shapes. Bake for 8-10 minutes on parchment paper on baking sheets until bottom just starts to turn slightly golden. Remove and let fully cool before icing. BUTTERCREAM ICING 1 cup (16 Tbsp; 226g) unsalted butter, softened to room temperature 4 – 5 cups (480-600g) confectioners’ sugar (see note) 1/4 cup (60ml) heavy cream, half-and-half, or whole milk, at room temperature 2 teaspoons pure vanilla extract salt, to taste (1/4 tsp is what I used) Directions 1. With a handheld or stand mixer fitted with a paddle attachment, beat the butter on medium speed until creamy, about 2 minutes. Add 4 and 1/2 cups confectioners’ sugar, the heavy cream, and vanilla extract. Beat on low speed for 30 seconds, then increase to medium-high speed and beat for 2 full minutes. Taste. Add a pinch of salt if frosting is too sweet. I always add 1/8 teaspoon. 2. Adjust if needed: You can control the consistency at this point—add up to 1/2 cup more confectioners’ sugar if frosting is too thin or more heavy cream if frosting is too thick (add only 1 Tablespoon at a time, beat together, then taste and add more if desired). 3. Use immediately or cover tightly and store for up to 1 week in the refrigerator or up to 3 months in the freezer. After freezing, thaw in the refrigerator then beat the frosting on medium speed for a few seconds so it’s creamy again.
