Paneer Momos are filled with paneer and vegetables and tossed in a spicy sauces. These vegetarian dumplings are so good on their own or with a side of spicy red chutney. Momos are small dumplings filled with meat/vegetables which travelled across the borders from Tibet and Nepal to become popular in India. They initially became popular in north-east and eventually everywhere else. Cooking methods steps:- First prepare the outer dough with wheat flour, salt and ¼ cup water plus 1 or 2 tablespoon as per needed. The dough should be non sticky not too soft. Keep it covered . For Stuffing:- Add 1 tbsp oil then Add finely chopped onion,ginger and garlic and fry it until transparent. Add chopped capsicum & cabbage. Once cooked then switch off the flame & transfer the mixture to another bowl. Add paneer, shezwaan sauce & salt Keep the stuffing aside. Momos Chutney:- First rinse 2 medium to large tomatoes (120 grams) in water a few times. Break or chop 3 to 4 dried red chilies, 7-8 garlic cloves. Heat 2 cups water in a pan and When the water comes to a boil, add the tomatoes and red chilies, garlic in it. Cook them for a total of about 8 to 9 minutes. You will see that the peels on the tomatoes have shrunk, got cracked and separated. When the tomatoes warm or cool down, slice off the top eye part. Peel the skins. Without adding water, blend to a fine and smooth consistency. In a pan, heat 2 tbsp oil and cook the tomato chilli paste. In another pan Add grinded tomatoes mixture then Add 1 tbsp oil , 1 tsp of tomato sauce, 1tsp of vinegar, and 1 tbsp of soya sauce & salt as per taste. Mix and cook until the raw flavour is gone. Steam Momos:- To make momos, take one portion of dough & , roll it into thin disc. Smear the edges with a drop of water. Fill the stuffing in the middle and fold to seal the momos. Pinch and make the sealed portion thin. Choose to fold any shape as momos, but make sure to seal it. Heat a steamer (I used idli pot). Steam all momos for 12-15 mins. Open the steamer lid & Apply oil coriander leave, chillie flakes, oregano. Steam it for another 5 mins.
