Perfect for Navratri, Ekadashi, or Upvas, these cookies are eggless, maida-free & made without refined sugar ✨ 🧾 Ingredients (Makes ~18 cookies, 20 g each) Rajgira (Amaranth) flour – ½ cup (60 g) Singhara (Water chestnut) flour – ½ cup (60 g) Sabudana (tapioca pearls, roasted & powdered) – ¼ cup (30 g) Ghee – ¼ cup (60 g) Jaggery powder / Mishri powder – ⅓ cup (50 g, adjust to taste) Cardamom powder – ¼ tsp Rock salt (sendha namak) – a pinch Chopped nuts (cashew, almond – optional) – 3 tbsp (plus extra for topping) 👩🍳 Method (Step-by-Step) 1️⃣ Prepare Sabudana Flour Dry roast sabudana on a low flame until they puff slightly and turn crispy. Cool completely and grind into a fine powder. 2️⃣ Make the Dough In a mixing bowl, whisk together ghee and jaggery powder (or mishri powder) until creamy. Add rajgira flour, singhara flour, sabudana powder, cardamom, rock and salt. Mix well and bring everything together into a soft dough (do not add water). 3️⃣ Roll & Shape the Cookies Place the dough on a clean surface or rolling board. Using a rolling pin, roll out the dough into a thin sheet (about ½ cm thickness). Sprinkle chopped cashews (or other nuts) on top and gently roll again to press them into the dough. Using a round cookie cutter, cut out cookies. Collect the scraps, roll again, and cut more cookies until all dough is used. 4️⃣ Bake Preheat the oven to 160℃ (320℉). Line a baking tray with parchment paper. Arrange the cookies, leaving slight gaps. Bake for 18–20 minutes or until the edges turn golden. 5️⃣ Cool & Store Allow cookies to cool completely on a wire rack. They will become crisp as they cool. Store in an airtight jar.
