Chicken Seekh Kebab with Yellow Rice – a perfect combination that’s far from boring! PART 1 - Yellow Rice We start with the yellow rice, packed with aroma and flavor. In a pan, heat a little oil and add ½ teaspoon zeera (cumin seeds) first to release that beautiful fragrance. Then add 2 diced garlic cloves, followed by 1 chopped onion, and sauté until golden brown. Toss in 1 chopped tomato and cook it down nicely. Now add the spices: 1 teaspoon cumin powder 1 teaspoon turmeric powder 1 teaspoon garam masala Stir well (add a splash of water if needed), then add 1 chopped green chili for a little kick. Add 1.5 cups washed (not boiled) rice, mix and lightly fry for a few minutes. Pour in about 2.5 cups chicken stock, let it come to a boil, and once the water reduces, cover and steam on low heat until perfectly fluffy. This rice is so flavorful and a total upgrade from plain white rice! PART 2 - The juicy Chicken Seekh Kebabs In a bowl, add 500g minced chicken along with the following spicies: 2 cloves garlic 1 teaspoon cumin powder 1 teaspoon garam masala 1 teaspoon black pepper 1 teaspoon salt 1 teaspoon chicken powder 1 teaspoon chili flakes ½ teaspoon turmeric powder 1 teaspoon tandoori masala for that extra punch ( Trust me on this) In a chopper, chop 2 medium onions, 3–4 green chilies, and fresh coriander leaves. Squeeze out all the excess water using your hands or a straining cloth, then add the dry mixture into the minced chicken. Mix everything really well. Shape the mixture onto skewers or chopsticks and fry on low to medium heat until golden and cooked through.
