Then we take 600 grams of chicken breast and marinate it with: ginger garlic 1 teaspoon black pepper 1 teaspoon turmeric 1 teaspoon cumin powder 1 teaspoon garam masala 1 teaspoon chili powder 5 teaspoons yogurt Mix everything well and let it marinate for at least 30–40 minutes (overnight marination gives the best results) Step 2: For the gravy, heat some oil in a pot and add whole spices – bay leaf, star anise, whole black pepper, and 1 teaspoon zeera (cumin seeds). Once fragrant, add ginger garlic and sauté until golden. Add the sliced onions and cook until golden brown, then add the tomatoes. Mix well and cook until soft. Then add 1 chicken cube, green chilies, and about 2 tablespoons tandoori masala. Cook everything together until well combined and aromatic. Then blend this mixture until completely smooth – this gives the curry its rich, restaurant-style texture. Step 3: In the same pot, cook the marinated chicken until tender and fully done. Once cooked, pour back the blended tomato-onion gravy and mix well. Now comes the magic – add about ½ cup butter (or as desired) and ½ cup cream. Stir gently and let it simmer until thick, rich, and creamy. Garnish with fresh coriander leaves or green chilies and serve hot with naan, roti, or rice.
