Cauliflower Capsicum Gravy Curry Recipe Ingredients: 1 cup cauliflower florets 1 capsicum (chopped) 1 onion (chopped) 2 tomatoes (chopped) 1 teaspoon ginger garlic paste 8–10 cashew nuts 1/2 teaspoon turmeric powder 1 teaspoon chilli powder 1 teaspoon coriander powder 1/2 teaspoon garam masala 1/2 teaspoon fennel seeds (saunf) 1 dry red chilli Few curry leaves 1/2 teaspoon kasuri methi (crushed) Salt to taste Oil as required Water as required Fresh coriander leaves for garnish Method: 1. Take cauliflower florets in a pan. Add water, salt and little turmeric powder. Mix well and cook until soft. Drain and keep aside. 2. Heat oil in a pan. Add fennel seeds, dry red chilli and curry leaves. Sauté well. 3. Add chopped onions and sauté until soft. 4. Add salt, chopped tomatoes, chilli powder, turmeric powder, garam masala, coriander powder and cashew nuts. Mix well and cook until tomatoes become soft. 5. Switch off the flame and allow the mixture to cool. Grind into a smooth paste in a mixer jar. 6. Heat oil in another pan and fry the cooked cauliflower until light golden brown. Remove and keep aside. 7. In the same pan, add little oil if required. Add fennel seeds and ginger garlic paste. Sauté well. 8. Add chopped capsicum and fry for 2–3 minutes. 9. Add little garam masala and mix well. 10. Add the prepared paste and cook for a few minutes. 11. Add little water for gravy consistency and mix well. 12. Add the fried cauliflower and cook for 5–7 minutes. 13. Finally add crushed kasuri methi and fresh coriander leaves. Mix well and switch off the stove. Tasty and creamy Cauliflower Capsicum Gravy Curry is ready.
