Thank you! Recipe for: Maslenitsa with Cheese according to an Old Family Recipe. Fluffy and Delicious! Necessary products: For the dough: 1 kg. flour, pre-sifted 2 eggs + 1 egg white at room temperature 200 ml. lukewarm water 200 g. yogurt 100 ml. oil 7 g. dry yeast 1 tablespoon sugar 1 tablespoon salt For the filling: 300 g. crumbled cow's cheese 100 g. melted lard 100 g. melted butter For spreading: 1 egg yolk 1 tablespoon fresh milk Preparation method: Prepare the dough: Pour the water into a large bowl and add the sugar, yeast and 2 tablespoons of the flour. Stir well until the sugar dissolves. Wait 10 minutes for the yeast to activate. Add half of the oil, eggs plus egg white, yogurt and salt to the activated yeast. Mix with a wire whisk. Gradually add the flour, stirring constantly until it becomes a thick paste. Then knead with your hands until you get a smooth, soft and elastic dough. Spread the dough on the counter, brush with some of the remaining oil and knead until it absorbs the oil. Repeat until the dough absorbs all the oil. Dough rising: Shape the dough into a ball and place it in a large, oiled bowl. Brush the top of the dough with a little oil, cover the bowl with a lid and let the dough rise in a warm place for 1 hour. Shaping the butter cake: Once the dough has risen, knead it lightly and take it out onto the counter. Divide the dough into 4 equal parts and shape into 4 balls. Grease the counter with a little oil. Take one ball and roll it out with a rolling pin to form a rectangle. Brush with a little of the melted butter and oil, sprinkle with grated cheese. Repeat the same process with the remaining balls, stacking the dough on top of each other, brushed with butter, oil and sprinkled with cheese. Carefully roll up, twist the roll and roll it into a snail. Transfer the snail to a baking sheet lined with baking paper. Second rising and baking: Cover the butter cake with a towel and leave it to rise in a warm place for another 30 minutes. Then brush with the beaten egg yolk and fresh milk. Bake in a preheated oven at 180 degrees, without a fan, in the lower part of the oven, for about 40-50 minutes. Result: The butter cake will have a thin crispy crust, and on the inside - very soft and fluffy! Enjoy your meal!
