Slice the fish meat into thin strips. 2. Place the sliced fish in a large bowl. Add the salt and mix thoroughly until well-combined. 3. Stuff the mixture into a jar. Leave it to sit overnight (to allow the fish meat to firm up). 4. The next morning, remove the fish from the jar and squeeze out the excess liquid, retaining only the firm fish meat. 5. Add the toasted rice powder, galangal, and palm sugar to the fish meat. Mix everything well until fully combined. 6. Stuff the seasoned fish mixture back into the jar. 7.
