Boiling: After soaking, rinse the beans thoroughly and boil them until they are cooked (no specific time, just until tender). Cooling: Once cooked, drain the beans and spread them out to dry and cool down completely. Fermentation (Phase 1): Sprinkle the crushed yeast starter (Me-Tape) over the beans. Place them in a jar and leave them for 2 days to allow the fermentation process to begin. Preparation (Phase 2): After 2 days, melt the palm sugar in a pot over heat, stirring until it turns a deep reddish-brown (caramelized). Mixing: Add 2 liters of water and the salt into the melted sugar. Stir well. Simmering: Add the fermented soybeans into the pot. Stir and simmer over the fire for 30 minutes to 1 hour to ensure the beans become soft and fully absorb the flavors. Storage: Turn off the heat and let it cool completely.
