This homemade broccoli soup is ready in just 20 minutes using simple, affordable ingredients like broccoli, cauliflower and avocado. Perfect for meal prep, weeknight dinners, or anytime you need something warm and nourishing. Ingredients: 518g of broccoli 430g of cauliflower 3 Tbsp of olive oil 1 Can of coconut milk 1/2 Medium to large onion 1 Tsp of salt 5 Garlic cloves 1 Tsp of ground white pepper 1 Tsp of fresh ginger (minced) 1 Tsp of cumin 1 avocado 1 Tsp of fennel seeds (optional) 3 Cups of water or vegetable broth (add more if needed) 1 Tbsp of Haitian Epis (green seasoning) or use vegetable base Better than Bouillon (optional) Instructions: 1. Mince garlic, onions and fresh ginger. 2. Heat up olive oil in a large pot. Once the oil is ready, add garlic, onions, ginger and saute for a few minutes. 3. Once the ingredients from step 2 are translucent or cooked to your preference stir in fennel seeds and cumin. 4. Add broccoli and cauliflower. Mix them thoroughly with the other ingredients in the pot 5. Add water, coconut milk, salt and ground pepper. Next add epis or better than bouillon. 6. Cook soup for 12-15 minutes on medium heat. Once the vegetables are soft enough add the avocado and blend them until they are smooth and creamy. 7. Simmer on low heat for 10-15 minutes.
