Homemade Salmon Roe (Caviar) 2 Ways to prepare and clean Salmon Roe from the Membrane. Method 1 – Hand Method 1. Fill a bowl with hand-hot water (not boiling). 2. Place the roe with its membrane into the water for 7-15 seconds. 3. Drain into a strainer. 4. Gently move the roe back and forth with your hands until the eggs separate from the membrane. 5. Rinse with cold water, transfer to a clean bowl. 6. Repeat if needed until the roe is clean. Method 2 – Cooling Rack Method 1. Fill a bowl with hand-hot water and soak the roe with membrane for 7–15 seconds. 2. Drain into a strainer. 3. Place a cooling rack over a bowl, then gently rub the roe sac back and forth across the rack. 4. The eggs will fall through into the bowl. 5. Rinse with cold water, then transfer to a clean bowl Make Salmon Roe Ingredients: 2–3 cups fresh cleaned salmon roe 7 cups water (divided) 10 tbsp salt (divided) Ice cubes Extra virgin olive oil (optional, for finishing) Instructions: 1. Prepare a blanching bath In a pot, bring 4 cups water to a boil. Stir in 5 tbsp salt until fully dissolved. 2. Blanch the roe Place about 2 tbsp roe in a fine strainer. Dip into the boiling salted water for 8–10 seconds, gently stirring with a spoon. Transfer roe immediately into another strainer. Repeat until all roe is treated. 3. Make a brine In a clean bowl, dissolve 5 tbsp salt into 3 cups cold water. Add ice cubes to chill the brine. 4. Brine the roe Transfer blanched roe into the cold brine. Marinate for 10–15 minutes. Taste after 10 minutes; if salty enough, remove. For a stronger cure, leave up to 15 minutes. 5. Adjust saltiness (optional) If too salty, soak briefly in plain cold water, then drain. 6. Drain & dry Pour roe into a strainer. Spread gently on cheesecloth or paper towels to remove excess moisture. 7. Finish & serve For extra flavor, drizzle with a little extra virgin olive oil (optional). Enjoy fresh on buttered bread, crackers, or with cream cheese.
