Enjoy it around the holidays or anytime of the year. thanks for watching! ✨ CONNECT WITH ME: Instagram → / holistichabits My Website → https://holistichabits.com Sign up for my newsletter → https://holistichabits.com/signup 🛍 SHOP MY FAVORITES: → My favorite skincare, haircare & wellness picks: https://holistichabits.com/shop Red lipstick I am wearing is by Red Apple Lipstick in the colour "Risque": http://bit.ly/2i1tiNb Holiday Risotto Prep time: 15 - 20 minutes Cooking time: 25-30 minutes Hearty Ingredients: 1/4 cup olive oil 1.5 cups carnaroli rice or Arborio (DO NOT RINSE) 1/2 cup white wine (I use Sauvignon Blanc) 5 to 6 cups broth (heated) 1 red onion or 2-3 large red scallions, diced 1 cup Brussels sprouts finely sliced 1/3 - 1/2 cup dried cranberries (depending on your sweetness taste preference) Delicate ingredients: 1 cup carrots, grated 1 cup celery, finely sliced Spice to taste with the following minced fresh herbs: 4 tsp Sage 2 tsp Thyme 1 tsp Rosemary (optional) 1 tsp Savory (optional) 1/2 cup parsley (added the last couple minutes of cooking) Garnish: 1/4 cup toasted pine nuts (optional) Salt and pepper to taste Heat olive oil in wide, low profile* sauté pan. Add onions and let sweat for a couple minutes. Do not brown the onions. Add Brussels sprout and cranberries and sauté another minute or two. Add your rice and stir to coat every piece in butter and very lightly toast. Once rice is coated and slightly toasted add 1/2 cup of wine. Stir until liquid evaporates. Now start adding 1 ladle of hot broth, stir until liquid is gone, add another ladle of broth, stir ... ... ... continue this process until you are down to 2 ladles of broth left and then add all your delicate ingredients. You can save the parsley for the last couple of minutes is you prefer a fresher raw parsley flavour. Continue adding the remaining broth one ladle at a time until the risotto is finished. Start taste testing the risotto about 20 -25 minutes into the cooking process to check the tenderness of the rice and prevent over cooking. Your rice should be soft on the outside and slightly firm (al dente) on the inside. Serve as is or sprinkle a few roasted pine nuts on top. *A wide low profile pan is important for a good Risotto so that the liquid has a better chance of evaporating. If you don't have an actual Risotto pan a large stainless steel skillet will work well.
