Fabada Asturiana is a hearty, satisfying bean stew and is a pride of Asturias, Northen Spain. This white beans (fabada beans) stew has smoky flavor from smoked meats like chorizo and pork belly and famous Spanish smoked paprika and saffron. FABADA ASTURIANA You will need: 500g dried Fabada beans(soaked in water a night before) 1 pound smoked pork belly (cut in three portions) ¾ cup smoked bacon(diced into cubes) 1 large or 2 medium onions(cubed) 4-5 cloves garlic(minced) 2 tbsp Spanish Olive oil 2 bay leaves 1 dry chili pepper ½ tsp Spanish saffron 1 tsp Spanish smoked paprika 1 tsp sweet paprika 1 tsp black pepper salt (if needed) ½ pound of Chorizo sausage METHOD: In a large cast iron pot add olive oil and heat up. Add diced bacon and cook for 4-5 minutes until slightly crispy. Add diced onions and cook until soften. Add minced garlic and cook for just a minute. Add spices and cook for 1 minute, then add splash of water, so your spices will combine. Add pieces of pork belly and cover them with rinsed white beans. Add enough water so your ingredients covered 1 inch over. Bring to boil. Lower the heat to simmer and add bay leaves and chili pepper. Cover the pot and simmer for 90 minutes. Add Chorizo. Mix very gentle. Cover the pot and simmer for 30 minutes. Take large pieces of pork belly out and slice into smaller portions. You can do the same with chorizo. Return all the meats back to the stew, cover with lid, turn the heat off and let rest for 10-20 minutes. Enjoy with rustic bread. Spanish ingredients: https://www.tienda.com Thank you for watching!
